Choc-Oat-Nut Granola Balls
I've been trying to make a truly healthy, on-the-go treat for a while now. After lots of trial and error, I finally have a really yummy, really healthy snack that tastes just like chocolate chip Chewy brand granola bars!
They aren't overly sweet, they fill you up, and they're loaded with lots of good protein and fiber. Plus, they're packed with flax (full of B vitamins!) and hemp seeds (essential amino & fatty acids!)....with just a sprinkle of chocolate to sweeten everything up.
These Choc-Oat-Nut Granola Balls are vegan, gluten-free, soy-free, and raw!
1 cup (gluten-free) oats
1/2 cup almond butter
1 cup shredded coconut
1/2 cup ground flax
1/4 cup hulled hemp seeds
1 tablespoon room temperature coconut oil
4 tablespoons brown rice syrup or agave
1 teaspoon vanilla
1-2 tablespoons water
1/4 cup vegan chocolate chips (optional)
In a large bowl, mix together all ingredients except water and chocolate chips.
I've found its easier to use a fork to mash and squish everything together, since the coconut oil can sometimes clump together.
Once everything is well combined, add the 1-2 tablespoons of water to make it all a little sticky-you want to be able to roll the finished product into balls.
Add the chocolate chips and use your hands to mix 'em in.
Roll the mixture into about 1 inch balls, and place on a flat plate or cookie sheet.
Refrigerate for an hour before eating.
To store, keep in a plastic bag or container in the refrigerator for up to a week.
Makes about 20 balls.
