Sweet Potato Fries with Sweet Mustard Dipping Sauce
Yeah, it DOES sounds delicious. And it is, too. We kicked the average sweet potatoes up a notch and added a dipping sauce. Because we understand that vegans deserve delicious appetizers too!
For the Fries:
2 medium sized sweet potatoes
salt & pepper
spicy red pepper flakes
For the Sauce:
3 tblsp dijon mustard
1 1/2 tsp agave nectar
1 tsp apple cider vinegar
Preheat oven to 375 degrees. Cut the well washed potatoes into fry like strips, generally no thicker than about 1/4 inch thick. Spread onto a cookie sheet, using a brush to coat with liquid coconut oil. Salt, pepper, and flake the fries to desired spice. Bake for about 35-40 minutes, flipping about halfway through.
To make the sauce, simply combine all ingredients in a small bowl and whisk together well. Serve chilled with warm fries.
