Plant-Powered Families Cookbook Review + Giveaway!

Chances are, you've been to Dreena's Plant-Powered Kitchen blog. If you haven't- drop EVERYTHING and GO NOW! Everything she does is amazing. Her plant-powerful, family-friendly, whole food recipes are always thoughtfully presented and beautifully photographed, and her 20 years of knowledge as a vegan shines through in her creative recipes. Dreena is one of the pioneering vegan cookbook authors, and Plant-Powered Families is her 5th cookbook. She definitely knows how to throw together a great recipe, and this cookbook offers up 100 of her kid-tested & family approved favorites. The book is organized into both a cookbook and some helpful hints on getting picky eaters from toddlers to teens to eat and enjoy more plant-based meals. And with recipes like Double Chocolate Orange Banana Muffins, Pumpkincredible Hummus, Umami Sun-dried Tomato  & Almond Burgers, Milk Chocolate Fudge Sauce, and Dreamy Baked Bananas...how could they not?! This is a great cookbook for people new to the plant-based lifestyle, families looking to get creative with new recipes, and parents looking to pump up the veggies in lunch boxes and around the dinner table. There's something for everyone, and since Dreena is an expert, you can guarantee everything you make will be good. 
We chose to share Dreena's recipe for White Bean Guacamole because we love avocados AND we love recipes that pack a little extra protein punch - and this one certainly does! Plus, the flavor is mellow enough for kiddos but satisfying enough for adults. Its delicious! But first, a note from Dreena about this recipe: 

It’s no secret that our girls love guacamole. We go through many avocados a week. One night I decided to stretch the avocados and bump up the guac nutritional profile with the addition of white beans. Somewhat a cross between a guacamole and a hummus, this thick, creamy dip is a hit in our house.

Dreena Burton's White Bean Guacamole
Ingredients:

2 lightly packed cups roughly chopped/sliced ripe avocado
1 cup white beans
1/2 teaspoon sea salt
2–21/2 tablespoons lemon juice
Water, to thin as desired

Directions:
Place the avocado, white beans, sea salt, lemon juice, and water in a food processor or blender and blend until smooth. Season to taste with additional salt and/or lemon juice.

Notes:
  • Kick it up for the adults by stirring in one of these add-ins: a few tablespoons of a mild salsa, minced fresh parsley or cilantro, or grated garlic.
  • Try pureeing in a handful or two of baby spinach (this will smooth out best in a Blendtec). It will simply intensify the green color and you’ll have added a little extra green power!
  • FV Note: We prefer a chunkier guac, so we mashed our avo + beans with a fork rather than a food processor. We also added a sprinkle of red pepper flakes and some fresh cilantro on top!
