Jackfruit Philly Cheesesteaks

When I first met Alex there wasn't a Philly Cheesteak he wouldn't eat for lunch. He LOVED them! He was a sucker for the 'traditional' - although clearly it's debatable what the traditional version is exactly. He's always considered the melted provolone slices, not the cheeze whiz sauce, the original version - and the chef in me wants to hope he's right. So when he told me he'd sort of been craving that familiar old sandwich, we knew we could make a vegan version that was just as friggin' good. And I think we nailed it on this one. The secret? The cheesier-than-ever Daiya provolone slices! They're the perfect sub for the ooey-gooey, melty cheese that makes the original so memorable. The slices melt and stretch just like real cheese, but are a delicious, plant-based alternative for anyone looking to eat better, whether they’re dairy-intolerant, allergic, vegan, or simply living a healthy lifestyle.

The jackfruit makes the perfect substitute for a shaved steak, and was super like the original once we got a little char on the jackfruit. Our best tip is to cook in cast iron if you can - you'll get nice, crispy edges on the jackfruit. Once you get the jackfruit cooked up you toss in the grilled veggies and cheese, and voila! You've got yourself a super yummy, way healthier Jackfruit Philly Cheesesteak Sub! These sandwiches are so yummy served up fresh, but can be easily wrapped in paper and taken along on a picnic. Either way, do yourself a favor and cook these up for yourself. The recipe makes enough for two, so you can make one for someone you really like or have leftovers for day two. Oh, and people usually ask - we find our jackfruit at local Asian markets, but you can usually find it, though overpriced, at Whole Foods as well. Enjoy!

INGREDIENTS
Daiya vegan provolone cheese slices
​1 loaf Italian bread or 2 large sub rolls, sliced

1 teaspoon coconut oil
1 medium yellow onion, thinly sliced
1 red bell pepper, thinly sliced

1 teaspoon coconut oil
2 - 20 oz. cans jackfruit, drained and shredded
1/2 cup water
1 large clove of garlic, minced
1 teaspoon liquid smoke
1 teaspoon maple syrup
1 tablespoon white cooking wine
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon soy sauce
salt + pepper to taste

DIRECTIONS
Place the Daiya slices and sub rolls to the side, you'll need them after the filling is prepared.

Heat coconut oil in a medium-sized pan over medium heat. Sauté the thinly sliced onions and peppers until softened, about 8-10 minutes. Remove from heat and set aside.

Begin heating the next bit of oil in a large skillet over medium heat. As it heats up, pour in the shredded jackfruit, water, minced garlic, liquid smoke, and maple syrup. Sauté until the liquid reduces to about half, then add the white cooking wine, smoked paprika, onion powder, soy sauce, salt and pepper. Stir to combine, and continue to cook over medium heat until the liquid has completely reduced and the jackfruit is beginning to brown.

Throw the onions and peppers into the pan with the jackfruit and toss to combine. Line the mixture into a straight line across the middle of the pan. Place Daiya provolone slices onto the mixture (we used 2 per sandwich), then cover the pan with a lid for about 30 seconds to a minute, or until the cheese has become melty on top of the jackfruit mixture. 

Use a spatula to scoop the mixture onto your sub rolls and enjoy! 


​NOTES
Leftover filling will last in the fridge, covered, for a few days. 

Traditional cheesesteaks are served on soft bread, but all we could really find was a french baguette. While soft sub rolls are my recommendation, use what you can find.

BBQ Cauliflower Bites

THE BIG GAME IS ALMOST HERE! And maybe like me you're like 'Uhhh cool.' But even if that's the case, we're both here because we like to eat delicious vegan food, which just so happens to be the only reason I tune into the Super Bowl - okay endless snacks AND the commercials. Whatever. The point here is that this gal LOVES snacking, and these BBQ Cauli Bites are the BEST snack! Spicy, tangy, sweet - as messy and delicious as the real thing, but without the meat or weird ingredients. These flavor-packed, guilt-free munchies will make you seem like the best cook at the party! Plus, cauliflower takes up way less room in your stomach than chicken would, aka MORE BEER. 
Even if you're not into watching football this Sunday, you should still make these. 'Cause they are really fricken delicious. I made a pretty big batch last weekend and Alex and I finished it together, no problem. They don't need any dipping sauce since they're slathered in any BBQ sauce, but if you're into ranch dip, it might be a delicious addition. We also have a great recipe for crunchy coated cauliflower nuggets if that's more your style. Oh and this sriracha buffalo hummus? PERFECT with all that beer. Let's eat! 
INGREDIENTS
1 1/2 cups unsweetened almond milk
1 cup all-purpose OR whole wheat flour
2 teaspoons garlic powder
1 1/2 teaspoons smoked paprika 
1/4 teaspoon salt
1/4 teaspoon pepper
1 large head (about 6 cups) of cauliflower, cut into florets
1 1/2 cups BBQ Sauce

DIRECTIONS
Preheat the oven to 450º. Line a baking sheet with parchment paper and set aside.

In a medium-sized mixing bowl, whisk together the unsweetened almond milk, flour, garlic powder, smoked paprika, salt, and pepper. 

Dip the cauliflower florets into the mixture, coating evenly. Tap off any excess batter and place the florets onto the baking sheet. Bake for about 20 minutes, flipping halfway through.

While the cauliflower bites cook, heat the BBQ sauce in a small saucepan, stirring occasionally, until heated through. When the cauliflower bites have cooked, pull them from the oven and using tongs, carefully dip each floret completely into the bbq sauce mixture and place it back onto the baking sheet. Continue this until all the florets have been dipped. Bake for 25-30 more minutes, again flipping about halfway through. When they’re finished, serve immediately!

NOTES
​Leftovers don't reheat very well. These are best eaten fresh!

'California Burrito' Tacos

If you're from anywhere else in the US and you think you know what good Mexican food is, I can tell you straight up: YOU'RE WRONG. Only in Southern California can you get authentic, traditional, spicy Mexican dishes made with love. And of course in California, we like to mix things up. Do it our way, you know? Thats probably why San Diego has become famous for putting its own twist on traditional carne asada burritos and adding french fries. Maybe it was the surfers who did it first, maybe we'll never know, but ordering a California Burrito anywhere in So Cal means that you're getting a stuffed burrito - including french fries. And it is DAMN delicious. The french fries add a bit of crunch and flavor to the burrito and help balance out the spiciness from the 'meat' and must-have hot sauce. Because we're such big Beyond Meat fans we used their beefy crumbles as our meat substitute and loved it. You can make your own french fries or buy your favorite frozen ones and bake 'em up, but either way this is a MUST TRY. In this recipe we made the traditional burritos into tacos for two reasons; first, we love tacos (who doesn't?), and second we have a hard time finding big flour tortillas that don't contain a bunch of sketchy ingredients. Tortillas should just be flour, water, salt and lime. Anything else, especially gross preservatives, and you can count me out. Instead we bought small organic corn tortillas and doubled 'em up, traditional style, and then put all our fillings (including a heart handful of french fries) inside. Add a squeeze of lime, a sprinkle of cilantro and hot sauce, and if you want - although traditionally not included- a little vegan cheese, and you've got a taco party on your hands. Let's eat!

INGREDIENTS:
French Fries
3 medium russet potatoes, cut into french fries OR about 3 cups of your fave frozen french fries
1 tablespoon coconut oil (only if making your own fries)
salt to taste

Meaty Crumbles
2 cups Beyond Meat Beefy Crumbles (or faux meat of choice- like in our jackfruit asada tacos!) 
1 tablespoon coconut oil
1 teaspoon cumin
1/2 teaspoon cayenne pepper 
1/2 teaspoon smoked paprika
1/4 teaspoon chili powder
1/8 teaspoon salt

Everything Else
1 lime, quartered
1 avocado, pitted and sliced
1/4 cup chopped onions
1/4 chopped cilantro
corn tortillas
hot sauce + salsa, to taste
vegan cheese for sprinkling (optional)

DIRECTIONS:
French Fries
Preheat oven to 400 degrees. If you're making fries from scratch, wash your potatoes well and slice into into fries about 1/4 inch thick. Coat a baking sheet in the 1 tablespoon of coconut oil, then spread your potatoes or frozen fries onto a baking sheet and bakes until golden and crispy, about 30 minutes, flipping halfway through. Set aside.

Meaty Crumbles
Pour meaty crumbles and coconut oil into a cast iron pan over medium heat. Add in cumin, cayenne pepper, smoked paprika, chili powder and salt. Stir well to evenly coat the crumbles in spices, and cook over medium heat until the crumbles are heated through and smelling delicious.

Everything Else
While the meaty crumbles + fries cook, prepare the rest of your ingredients; Slice the lime, avocado, and onion and chop the cilantro. Heat a separate cast iron pan, or pop the tortillas in the oven for a few minutes to heat warm them. When they're ready assemble the tacos starting with 2 layered corn tortillas, then top with beefy crumbles, fries, avocado, onions, cilantro and as much lime + hot sauce or salsa (or both) as you like. If you're adding a sprinkle of cheese, toss that on too. Leftovers can be refrigerated up to a week, but the corn tortillas should be heated fresh for each meal (duh). Enjoy! Makes 4-6 tacos.

Field Roast Fiesta Burger!

We've been fans of Field Roast for a few years now and have always loved incorporating their flavorful grain-based sausages in jambalaya, soups, and on their own in a bun and slathered in mustard and onions. At Expo West this year, we FINALLY tried the long-awaited and AMAZING Chao cheeses in all three flavors - tomato cayenne, creamy original, and coconut herb. They're super realistic in flavor + texture to what I remember munching on a kid and they are the perfect filling for an ooey-gooey grilled cheese. Alex is big on finding the PERFECT veggie burger- and as far as texture and flavor goes, Field Roast's Hand-Formed is his first choice. Is it the most realistic looking burger to a meat patty we've seen yet- especially pre-cooked. You could convince any meat eater that whats in the plastic is a turkey burger for sure...if you trash the label, of course. The burger base is a blend of whole barley, carrots, garlic, onions, and celery- and of course, a secret blend of spices! They're high in protein and non-GMO, and are hand-made in small batches, by hand, in Seattle. 
When we were sent a few extra samples after the Expo, we decided to create (what we're calling) a Fiesta Burger smothered in Firecracker Sauce, Roasted Poblano Peppers, and Cilantro Lime Cabbage Slaw...and its fucking delicious. So, let's just pretend we're celebrating Cinco de Mayo three weeks early, grab a margarita, and get cooking. Olé!

INGREDIENTS
2 Field Roast Hand-Formed Burgers 
2 slices of Field Roast Chao Tomato Cayenne Cheese
2 focaccia buns, sliced
1 large or 1 medium poblano peppers
2 cups shredded purple cabbage
1/4 cup chopped cilantro
1/4 cup freshly squeezed lime juice
1/2 teaspoon salt
1/2 cup vegan mayo
1-2 tablespoons hot sauce
1/2 teaspoon smoked paprika
1 avocado, pitted and sliced

DIRECTIONS
Roasted Peppers:
Preheat oven to 425 degrees. Roast washed, halved, and seeded peppers on a lined baking sheet for 15-25 minutes, until skin gets bubbly and brown. Remove from oven, let cool, and peel off bubbly skin so you're left with just the meaty part of the pepper. Set aside. 

Cilantro Lime Cabbage Slaw:
In a large mixing bowl toss together cabbage, cilantro, lime juice, and salt. Set aside. 

Firecracker Sauce:
In a small bowl combine mayo, hot sauce, and paprika. Stir well to combine. 

Fiesta Burger:
Heat a teaspoon of oil over medium heat in a large cast-iron pan. Fry Field Roast patties until crisp and browning on one side. Flip burgers, toss on a slice of tomato cayenne cheese, and let burgers cook until equally crisp and browning on the bottom side. 
While the burgers cook, slather bottom patties with about 2 tablespoons each of the Firecracker Sauce. Top with the cooked burger and melty cheese, then layer on the roasted poblano peppers, Cilantro Lime Cabbage Slaw, and sliced avocado. Spread a bit more Firecracker Sauce on the top bun, add it to the pile, and enjoy! Serves 2. Leftover slaw + firecracker sauce can be refrigerated for up to a week.

When we first started this blog, one of the first things we tried to recreate was a vegan version of In-n-Out's Double Double burger. It was a sad attempt- bad photography, ingredients that weren't quite right, and the flavor just wasn't there. But 4 years later, we vegans are blessed with some amazing advances in the way of faux meats and cheeses, and our photography has gotten quite a bit better. If you're not from around here, you may not realize the cultural significance of In-n-Out on Southern California, but it is considered the best of the best in the fast-food world and has longer drive-thru lines than I've ever seen anywhere else. A 'double double' means two patties & two slices of cheese, and animal style is when they slather it in their thousand island-style sauce and grilled onions. In fact, its the first meal I ever ate when I came to California!
As the base for this burger, we used the amazingly meaty new patty from Beyond Meat, the BEAST BURGER. Yup. The beast burger. Its totally beastly, and would totally fool even the most regular of beef burger eaters. And it was the perfect substitute in this burger. It kept the flavorful, umami taste of a normal In-n-Out burger, but doesn't leave you feel guilty after eating a double stack. We slathered it in homemade 'sauce' and topped it with fresh slices of tomato and lettuce. Craving a juicy burger? Let's do this!

INGREDIENTS
Spread
1/2 cup vegan mayo
2 tablespoons ketchup
2 tablespoons relish
2 tablespoons white or apple cider vinegar
1 teasoon lemon juice
salt + pepper to taste

Onions
1 tablespoon oil
1/2 large white onion, diced
1/4 each salt + pepper
4-5 tablespoons cold water

Burgers
1 teaspoon oil
2 Beyond Meat Beast Burger patties
2 slices vegan american cheese (we used Follow Your Heart slices)
2 tablespoons mustard
4 dill pickle slices (optional)
2 seedless burger buns

DIRECTIONS
Spread
In a small mixing bowl combine mayo, ketchup, relish, vinegar, lemon juice, salt and pepper. Mix well to combine. Set aside.

Onions
Heat oil in a medium cast iron pan over medium heat. Add diced onion, salt, and pepper. Cook, stirring occasionally, adding 1 tablespoon of water each time onions begin to dry out. Repeat this process until onions are dark brown, soft, and caramelized. Keep warm on low heat or set aside.

Burgers
In the same or another large frying pan, heat oil over medium heat. Place two patties on the pan, and slather the top of each patty with 1 tablespoon mustard. Cook about 2 minutes on now side, until the patty is beginning to brown and crisp. Flip, add a slice of cheese to each patty, and fry patties in the mustard for another 2 minutes or so, until cheese is melted. While burgers cook, place buns bottom side down in a greased frying pan and heat about 1 minute on each side, until edges just begin to crisp.
Remove from heat, and top with spread, pickles, burgers, onions, tomato and lettuce. Then EAT!

Chick'n Tortilla Soup

One of the first recipes I ever made when I decided to try being a vegan was a tortilla soup from 'How It All Vegan'. Its a super simple combo of canned tomatoes, veggie broth, onions, spices and a hearty sprinkle of tortilla chips- very user friendly for a new vegan. Alex loved it. It may just have been the thing that convinced him that this whole 'no meat' thing wasn't so bad after all- he jumped on the vegan train just a few months after I did. And having a vegan partner makes life in our house very harmonious and very delicious. Especially when you get to sit down and enjoy a meal like this with your ridiculously good looking boyfriend after! 
This soup is a step-up from the stuff I was making way back then for sure, and takes less than an hour from start to finish. I added lots of onions, bell peppers, and fresh lime juice, plus the new Chick Seitan from Upton's Naturals. This stuff is amazing! It looks like chicken, it tastes like chicken (I mean I think- I haven't eaten chicken in years), and the texture would be great fried up and served with mashed potatoes or baked into pot pies- but also in this tortilla soup! It adds a great meaty texture and flavor to the soup and really makes it a meal. It's delicious! You can find the Upton's Chick Seitan anywhere their products are sold or you can order it online. But if you're avoiding gluten, ditch the faux meat and just enjoy a delicious, veggie-loaded tortilla soup. Let's do this!
INGREDIENTS:
1 tablespoon oil
4 cloves garlic, minced
1 large onion, diced
1 large bell pepper, diced
2 medium tomatoes, diced
4 cups vegetable broth
2 limes, freshly juiced (about 1/3 cup juice)
1 bay leaf
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon cayenne
1/2 teaspoon smoked paprika
1/2 package (4 ounces) of Upton's Chick Seitan

tortilla chips + cilantro, for garnish

DIRECTIONS:
In a large pot heat oil over medium heat. Sauté garlic, onion, and peppers until softened. Add in tomatoes, veggie broth, lime juice, bay leaf, spices, and Chick Seitan and simmer, stirring occasionally, for 30-40 minutes. When ready, serve with tortilla chips and freshly chopped cilantro. Makes 4-6 servings, and keeps about a week in the fridge. Enjoy!

Kimchi & Coconut Bacon Grilled Cheese

I love fermented foods. Kombucha, sauerkraut, kimchi- you get the gist. My most common grilled cheese to munch is with a bit of thousand island, grilled onions, and sauerkraut, kind of like a tempeh reuben without the tempeh. Something about the way those savory, salty favors mingle makes my mouth water and I can't get enough. In order to fulfill my latest craving but mix it up a bit, I came up with this humdinger. The sour, salty, crunchiness will leave you satisfied and is a fun way to add more probiotic foods to your lunch! They help with digestion, and I know many of us with food allergies suffer from tummy troubles- sometimes explained, sometimes not. Increasing the amount of fermented foods you eat can help your gut's pH and good bacteria increase, and can help you ingest food better.  Anyway, try this one- I think you're gonna love it...and your tummy will too!
INGREDIENTS:
2 slices of crusty bread (we prefer sourdough)
about 1/4 cup vegan cheese
about 1/4 cup coconut bacon
kimchi (your amount will vary based on preference)
vegan butter or coconut oil, for frying

DIRECTIONS:
Heat a medium skillet over medium heat until warm. While heating, spread both slices of bread with your favorite vegan cheese (or top with slices. We used Blode kuh Sriracha Cheddar.) Sprinkle with coconut bacon, then assemble sandwich by placing the other slice of bread on top of the first. Spread both outer sides of bread with a thin layer of vegan butter or coconut oil, then place on the heated skillet. Fry until bread becomes golden and crispy, then flip and toast the other side. When sandwich is finished, remove from skillet and open it up. Layer kimchi inside, sprinkle with a bit more coconut bacon, and replace bread. Slice into two melty, crunchy halves and eat immediately. Enjoy!

'Slaw & Caramelized Onions

Ever since we tried Jackfruit Tacos at Seabirds Vegan Food Truck over 2 years ago, we've wanted to make it at home. Finding it in stores, deciding on a worthy recipe, and successfully making it though? Well, here we are! Sometimes the most delicious things just take a little time. We made these Tuesday and ever since I've wanted MORE! Spicy, garlicky, meaty, full of flavor- and amazing. The dilly 'slaw adds a crunchy tang and the caramelized onions round it all out...because caramelized onions effing rock. Alex and I ate the whole batch between two meals, and we can't wait to make it again. It is seriously INCREDIBLE how 'pulled pork'-y in texture the cooked jackfruit is. A little softer, but it totally absorbs anything its marinated in, making it an excellent substitution for cooking up tiny, adorable piglets. It may be hard to find; we found ours at Whole Foods and have seen it sold at Asian markets in the area as well. If you're having too much trouble, try looking online. Whatever you have to do, get your hands on a can because this sandwich is about to change things up on ya and you're gonna love it. Let's eat!
INGREDIENTS:
BBQ Jackfruit
1 tablespoon coconut oil
1- 20 ounce can (10 ounces, drained) Jackfruit in brine or water (NOT syrup)
1 cup vegan BBQ sauce (we used Trader Joe's Sriracha Garlic BBQ Sauce & IT ROCKED)
1/4 teaspoon smoked paprika (optional)

Slaw
3 cups thinly shredded green cabbage
1 clove garlic, minced
1/4 cup vegan mayo
1 tablespoon apple cider vinegar
1/2 teaspoon maple syrup
1/2 teaspoon dried dill weed
1/8 teaspoon each of salt & pepper

Caramelized Onions
1 small yellow onion, thinly sliced
1 teaspoon coconut oil
water, as needed

DIRECTIONS:
BBQ Jackfruit
Drain and rinse the jackfruit. Pick out any seeds, discarding them. Using a fork or your fingers, shred the jackfruit. In a large skillet, heat coconut oil over medium heat. Pour in the shredded jackfruit, BBQ sauce, and smoked paprika, stirring to combine. Cook for 10-12 minutes, stirring regularly, or until the sauce thickens and reduces.
While the jackfruit cooks, move onto the slaw.

Slaw
Using a knife or food processor, shred the cabbage into a large mixing bowl. Add the garlic, mayo, cider vinegar, maple syrup, dill, salt & pepper and toss to evenly coat the cabbage. Set aside.

Caramelized Onions
In a medium-sized skillet, melt the coconut oil over medium heat. Toss in the sliced onions, stirring regularly so they don't burn. If they begin to brown, add a tablespoon of water. Continue this until the onions are lightly browned, softened, and caramelized.

To assemble, pile jackfruit onto a bun or bread slices, then top generously with 'slaw and onions. Serve immediately. Leftover can be refrigerated and eaten for up to a week, makes 3-4 servings, depending of your serving sizes. Enjoy!

Magic Vegan Bacon Greens

When Alex first told me he had seen a product online called 'Magic Vegan Bacon Grease',  I laughed. He has crazy awesome ideas sometimes, and I thought maybe this was just one of them in the making. But NOPE! Its a real thing. A delicious, heavent sent, better-than-any-oil-for-frying I've ever tried thing. When I first opened the jar, I remember asking Alex "Would it be weird if I bathed in this? Can we get more?!" Apparently, it would be. But man oh man, would I smell delicious!
Because if there's one thing I love (and you may already know this), its COCONUT BACON. Our recipe, the one I still consider best above all the rest, the one featured on Post Punk Kitchen's Best of 2014 (#14!!), is a staple in this house. Lucky for us, Magic Vegan Bacon Grease HAS chunks of homemade bacon- just made out of TVP, instead. Which frankly, holds up much better when you're frying it. Plus, this magic grease is virtually guilt-free: coconut oil based and free of hydrogenated oils & GMOs, its consistency when hardened (unlike below- damn So Cal heat wave) is that of REAL lard...only its 100% vegan. It can be used for cooking, frying, or baking, and is made with 11 very pronounceable ingredients (Coconut oil, soy protein (TVP), sea salt, demerara sugar, black pepper, onion, garlic, torula yeast, natural hickory flavor, & maple extract). We loved it to spice up these simple greens. It added all the flavor and richness they needed, and gave them a great 'meaty' flavor. Check 'em out on their website for more info. In the meantime, lets get our grease on!
INGREDIENTS:
2 tablespoons Magic Vegan Bacon Grease
2 cloves garlic, minced
3 small heads of bok choy, ends removed & roughly chopped
3 small zucchinis, halved and sliced
1/4 teaspoon smoked paprika
1/4 teaspoon chili powder
salt & pepper (to taste)

DIRECTIONS:
In a large skillet, heat the Magic Vegan Bacon Grease over medium heat. Sauté garlic for 2-3 minutes. Don't let it brown- burnt garlic tastes very bitter. Add in chopped bok choy and zucchini and cook, stirring regularly, for about 5 minutes- or until the veggies are softened but not soggy. Season with smoked paprika, chili powder, salt, and pepper & cook a minute more. Remove veggies from heat and serve immediately. Garnish with a sprinkle of Homemade Coconut Bacon. Saves well in the fridge for several days, but is best enjoyed immediately. Dig in!

Homemade Chick'n Salad

One of my favorite on-the-go summer lunches when I was growing up was a chicken salad sandwich piled high with lettuce and onion. My sister was more of a chicken nuggets kid, but I would've been satisfied with a can of shredded chicken and a jar of mayo any day. (Saying that out loud sounds a bit disgusting.) Since the summer heat's been hitting and we've been spending more time eating picnic-like meals outside, I've been craving a chicken-salad sandwich. Now, before we go any further, let it be said that I understand chicken salad is a totally regional dish. It's made differently everywhere you go; sometimes stuffed with raisins and walnuts, sometimes grapes and almonds, and sometimes with carrots, cucumbers & radishes. I made it simply, the classic way 10-year-old me would have enjoyed it- with some fresh onion and celery, the slight crunch of almonds, and a lot of lettuce on top. There's something about the dill and lemon juice flavors that really make this simple sandwich POP (and totally picnic-worthy). You're gonna love it. Let's eat!
Ingredients:
3 cups vegan chick'n, cubed & chopped (we used Beyond Meat GF Chicken-Free Grilled Strips!)
3/4 cup celery stalks, diced
3/4 cup red onion, diced
1/3 cup almonds, chopped
3-4 tablespoons fresh, chopped parsley

1 cup vegan mayo
2 tablespoons lemon juice
2 teaspoons sea salt
1 teaspoon ground pepper
1 teaspoon dijon mustard
1/2 teaspoon dried dill (or 1 1/2 teaspoons fresh dill, chopped)
1/4 teaspoon cayenne pepper (optional)

Directions:
Chop chick'n and place into a a large mixing bowl. Toss in diced celery, onion, almonds, and parsley. Stir and set aside.
In a separate, smaller bowl whisk together mayo, lemon juice, salt, pepper, mustard, dill, & cayenne pepper. Pour dressing into the larger bowl and toss to coat ingredients evenly. Et voila, chick'n salad! Serve topped with a sprinkle  of parsley and a twist of ground black pepper on some crusty bread or a bed of greens. Saves well in the refrigerator for about a week. Makes 4-6 servings. Enjoy!
